Watermelon Mint Summer Salad

Ingredients

  • ½ red onion, thinly sliced
  • 4 cup watermelon, cubed
  • ½ avocado, sliced
  • ¼ cup fresh mint, chopped
  • Optional dressing: 2 Tbsp Olive Oil, 2 Tbsp lime juice, 1 Tbsp honey, 1 tsp kosher salt, ¼ tsp black pepper
  • Optional: ½ cup feta cheese crumbles
  • Optional: 3 scoops of 0% greek yogurt or 2 slices of whole grain bread

Directions

  1. Add red onion, watermelon, avocado, and mint to a large bowl. Toss with dressing. Enjoy!
  2. Alternative option 1: Add red onion, watermelon, avocado, mint, and feta cheese to a large bowl. Toss with dressing. Enjoy!
  3. Alternative option 2:  Add red onion, watermelon, avocado, mint, and feta cheese to a large bowl. Toss with dressing. Place 2 scoops of salad on top of a bowl of greek yogurt or on top of 2 slices of whole grain toast. Enjoy!
