Ingredients
- ½ red onion, thinly sliced
- 4 cup watermelon, cubed
- ½ avocado, sliced
- ¼ cup fresh mint, chopped
- Optional dressing: 2 Tbsp Olive Oil, 2 Tbsp lime juice, 1 Tbsp honey, 1 tsp kosher salt, ¼ tsp black pepper
- Optional: ½ cup feta cheese crumbles
- Optional: 3 scoops of 0% greek yogurt or 2 slices of whole grain bread
Directions
- Add red onion, watermelon, avocado, and mint to a large bowl. Toss with dressing. Enjoy!
