Dining with Nature Spring Salad

Ingredients

  • 1 head (or 4.5 ounces) of Butter Lettuce
  • 1 cup of summer squash, peeled into ribbons with peeler or mandolin
  • ½ cup fresh green peas, steamed 
  • ¼ red onion, thinly sliced 
  • ½ avocado, thinly sliced
  • Optional dressing: 1 Tbsp Olive Oil, ½ Tbsp Apple Cider Vinegar, ½ Tbsp Lemon Juice, Dash of salt & pepper to taste

Directions

  1. Combine all ingredients in large salad bowl. Enjoy!
